The wine making team at Jacob's Creek aim for a broad flavour spectrum across parcels of chardonnay destined for Jacob’s Creek Chardonnay. Some fruit is picked showing fresh citrus and lemon characters. Other parcels of fruit are picked riper, giving more peach and melon flavours.
Brilliant, pale yellow colour. Citrus, lemon blossom, fragrant and fresh. Aromatic with spicy oak, very attractive. The palate is soft creamy and mouth filling. Excellent balance between fruit flavours, buttery malolactic ferment flavours and toasty spicy oak flavours.
Regular block visits by Jacob's Creek winemakers during ripening ensured the selection of quality fruit parcels for inclusion in Jacob’s Creek Riesling. The fruit was harvested in the cool of the night at optimum vineyard temperatures of less than15º Celsius and delivered to the winery.
Vibrant pale green straw colour. Attractive aromas of white floral, lime and lemon sherbet. Elegant floral lime and lemon sherbet with a soft natural acid backbone that provides structure and a generous length of flavour.
Parcels of fruit with generous varietal flavours were carefully selected during vineyard assessments by Jaocb's Creek winemakers. Harvest dates were determined on the basis of optimum fruit flavour intensity, sugar/acid balance and tannin ripeness.
The nose shows ripe plum and spicy fruitcake aromas, with hints of currant, chocolate and well handled cedary oak. The palate is medium bodied in structure, with ripe plum fruit flavours, goodmid palate fruit sweetness and rich yet soft, velvety Shiraz tannins through to the finish.
Chardonnay and Pinot Noir fruit for this wine was sourced from selected viticultural regions of South East Australia. The grapes were harvested in the cool of night to reduce the chance of phenolic pick up during transport. Gentle pressing produced fresh clean juice with delicate fruit flavours.
The colour is mid straw green with a fine gas bead and persistent mousse. The refreshing lemon citrus aromas of Chardonnay are in harmony with the red currant characters of Pinot Noir. The palate displays generous citrus fruit flavours and these are enhanced with creamy nutty yeast characters providing both richness and structure. The wine finishes soft, crisp and clean.
Gentle pressing in the winery produces juices of elegance, finesse and soft flavour, essential for the making of quality sparkling wine. A degree of natural pink colour is also preserved in the finished wine to produce this sparkling Rosé style.
Soft pink colour with a fine and persistent mousse. The Pinot Noir characters are showcased in this wine, with fresh strawberry and red currant notes followed by some delicate citrus from the Chardonnay. Generous red berry and citrus fruit flavours enrich the palate with creamy yeast autolysis providing depth and flavour. The wine finishes soft and round, with lingering berry flavours.
Moscato is a style of wine that is made from Muscat grapes which are highly aromatic with intense fruity floral aromas. This style is ideal for a refreshing, delicately flavoured sparkling wine. Fruit is harvested in the cool of night with each batch gently pressed and fermented separately. Secondary fermentation adds subtle creamy complexity and gives the wine its attractive fine gas bead and mousse.
Pale straw colour. The bouquet displays fresh, delicate tropical aromas with undertones of pear and peach. Hints of honeysuckle blossom. The palate is light and refreshing with tropical flavours. The wine marries subtle pear notes with a touch of melon leading to a zesty sparkling finish.
Harvested at 9.5° – 11.0° baumé, minimal juice contact with the skins and gentle pressing produce juices of elegance, finesse and delicate fruit flavour. Cool fermentation using a yeast strain isolated in Sparkling produces clean, delicate base wines that differ in style, depending on the variety and the region. The base wines receive full malolactic fermentation which adds creamy complexity. The first blending phase occurs prior to the secondary fermentation in the bottle. The second blending phase takes place after age on yeast and involves a number of tirage wines to produce a consistent product.
The colour is mid straw green. The bouquet is of bread crust and red currant pinot noir fruit leading creamy and biscuit yeast development. The palate of elegant and lively fruit flavours are married with creamy yeast characters which carry through to a long clean finish. Good flavour weight and balance.
Steingarten Riesling displays all the qualities of a classic cool climate aromatic white wine style.
Vibrant pale green colour. Lovely ripe lime citrus aromas with a back drop of lemon blossom and musk nuances. A very rich and flavoursome palate, showing delicious ripe lime and grapefruit characters, subtle hints of rose petal and musk are also evident. The melange of classic Riesling characters is supported by a delicate mineral acidity, which provides great length and persistence to the wine. A superb Australian Riesling which will richly reward with careful cellaring for up to 20 years.
The key to providing premium high quality wines from the vineyard is in the selection process. Each Coonawarra vineyard was carefully monitored as ripening progressed and only those parcels exhibiting excellent potential in varietal expression and colour intensity were set aside as candidates for St Hugo.
Full depth red with crimson hues. Intense blackberry and cassis with minty notes and spicy oak. Concentrated blackberry, cassis and mint with supple velvety tannins and integrated cedary oak.
