Grape development and flavour profiles were monitored in the vineyard by the winemakers and viticulturists. Specific vineyards were selected for their flavour intensity. The fruit was harvested on cool nights and promptly delivered to the winery. In-line must chilling after destemming, and rapid, gentle juice separation in a membrane press ensured the retention of delicate, primary fruit characters and minimal phenolic extraction. The juice was clarified and fermented cold using a selected yeast strain. The varietal and regional characters of the wine remain, due to meticulous handling to bottle, and the screw capclosure.
Enticing lemon sherbet and white floral varietal charactersare framed by a soft mineral acid structure. Restrained and refreshing when consumed in its youth, the wine has the potential to develop complex aged Riesling characters with careful cellaring up to 15 years.
During the growing season winemakers and viticulturists spent many days amongst the Chardonnay vines in Padthaway selecting parcels of fruit from the most promising vineyards. What they found were grapes expressing ripe varietal fruit flavours with balanced natural acidity. To determine the ideal harvest date sugar and acid levels were monitored in conjunction with flavour accumulation, and vine condition.
The complexities of the aroma follow on to an intriguingly complex pallet. This is a strong wine with layer upon layer of elegant, and subtly integrated, fruit and oak. The white peach fruit is ripe and full and is balanced by soft lemon citrus acidity whilst the oak adds nuances of smoky, spicy, nuttiness.
The grapes for Jacaranda Ridge Cabernet Sauvignon were sourced from the very best Coonawarra vineyard sites, picked at optimum flavour ripeness following repeated vineyard inspections by the winemakers. Each individual vineyard parcel was destemed into small static fermenters and inoculated with a neutral yeast strain to maximise the expression of varietal Cabernet Sauvignon fruit.
An iconic example of a Coonawarra Cabernet Sauvignon. Still youthful on release, this wine will reward the patient by revealing its true potential over the next 15 to 20 years. We recommend that this wine be decanted before serving for best results.
