Fruit was selected by the winemaker and harvested when both flavour and Baumé levels were optimum. The source vineyards produce fruit that displays exceptional varietal characteristics.
The Vat 9 Cabernet Sauvignon displays Deep purple with crimson hues. Fragrant cassis, ripe plum with hints of mint and subtle cedar oak aromas. Rich black fruits and sweet plum with fine grain tannins and well integrated oak, makes this a soft generous wine.
The 2009 – 2010 growing season saw one of the earliest seasons to date. Timely rainfall received during early summer gave the vineyards some relief from a dry winter and spring. Conditions for ripening of Pinot Grigio were close to ideal with warm days and cool nights. Fruit was picked once optimal flavours were achieved.
Fruit was hand harvested and whole bunch pressed to retain varietal character and freshness and to avoid any pink colour pickup. Winemaking techniques included warmer fermentation with fine solids to improve texture and softness while preserving varietal expression. The wine is given extended time on yeast lees to give complexity to the natural fruit flavours
Once the fruit for De Bortoli Semillon Sauvignon Blanc was at optimal maturity, it was harvested in the cool of the night and gently pressed. This helps retain varietal character and freshness. Once pressed, the juice was roughly clarified and allowed to ferment in both stainless steel and older French oak casks.

The inaugural HRB Cabernet Sauvignon 2006 is sourced from premium vineyards in the Coonawarra and Margaret River, two regions which are synomonous with outstanding Cabernet in Australia. A warm and relatively dry growing season allowed for the early development of intense fruit flavours and the resultant wine is characterised by fine grain tannins and ripe berry flavours with great cellaring potential.

Careful handling of fruit combined with cool fermentation temperatures ensured the retention of fresh vibrant fruit flavours allowing each region to express its unique flavour profile on the blend. The Clare Valley delivers citrus aromas and concentrated juicy mid palate whilst the Tasmanian fruit contributed spice, complex flavour and bracing acidity.
