On reaching optimum maturity, the grapes were harvested in the cool of the night to preserve the fresh fruit flavours. The fruit was crushed into the McWilliam’s drainers where the premium free-run juice was separated from the skins. The juice was delicately handled through the juice clarification and fermentation stages where the best parcels for this blend were selected. The wine was then blended and stabilized prior to filtration and bottling.
Tropical fruit flavours such as passionfruit, pineapple and lychee dominate and are complemented by a lemonade-like finish.
The colour is bright, straw with golden, green hues. The bouquet is preserved lemons and apricots with orange rind botrytis characters complimented by hints of vanilla. The palate is intense preserved lemons and apricot fruit which tantalise the taste buds. A smooth viscosity with a textural length ensures the palate is complete. The structure of this wine is definitely leaning towards freshness rather than lusciousness.
