An aromatic variety that displays intense gooseberry aroma, fresh grassy characters and crisp, lively acidity. In Australia Sauvignon Blanc is often blended with Semillon. This fresh style of wine is best enjoyed in its youth.
The 2010 vintage in the cool climate Adelaide Hills was again wonderful.  Excellent winter rain in 2009 and a warm, wet spring set the vineyards up beautifully.  The whole season moved along a little earlier than usual.  The pristine fruit was delivered from the Deanery vineyard near Balhannah, and the Cobbs Hill vineyard on the edge of Lenswood, to the nearby Petaluma winery in the Piccadilly Valley between the 3rd and the 9th of March.  De-steming and crushing followed and the chilled must (skins, seeds and juice) was then gentle pressed, with the cold juice allowed to run off into tank.  Various parcels were then fermented with a number of yeast strains including some wild yeast.  The lees was stirred in tank on the completion of fermentation.  A small proportion (5%) was fermented in French oak barriques.  The finished was was cold settled to clarity, before racking and a gentle filtration to capture all the delicate but vibrant Sauvignon Blanc character.  It was bottled in September 2010.
The 2010 Bridgewater Mill Sauvignon Blanc displays wonderful fruit intensity, with fresh exotic fruits, a lovely faint herbal edge and delicate racy acidity. Tropical fruits combined with lovely texture and crisp mineral dryness signal the 2010 Sauvignon Blanc as a lovely drink-now wine, showing the regional traits that Adelaide Hills wines are becoming renowned for.
