The Shiraz grape tends to be used as a great backbone for many variations of blending Red Wines. Having added varieties like Cabenet, Grenache, Mataro, Tempranillo, Viogner we get what is easily titled Shiraz Blends.
This wine is made from a blend of Dolcetto and Shiraz grapes. The fruit was harvested from mid February to mid April 2010 at baumé levels ranging from 13.0° to 15.0°. The wine was bottled soon after fermentation, which was stopped to retain a little natural sweetness and carbon dioxide. It has an alcohol of 10.0%, a pH of 3.46 and acid level of 6.2 g/L.
Dolcetto and Syrah is a fantastic light red wine that is served slightly chilled and is a good match with a wide range of foods, from spicy Asian to desserts. Try it with a Thai red beef curry loaded with freshly chopped chilli and coriander and serve it with jasmine rice. For the dessert option, a raspberry panna cotta with seasonal berries and double cream would be ideal.
