BLEND: 100% shiraz.

VINEYARD: The majority of the shiraz was grown on Cape Mentelle Estate Vineyards located in the Wallcliffe and Karridale subregions, within the Margaret River appellation. The soil of these vineyards is derived from decomposed granite and consists of a gravelly loam over a deep clay subsoil. All vines are vertically shoot positioned and managed to ensure balanced growth during the season.

THE SEASON: The 2010 harvest in Margaret River continues a run of excellent vintages, again marked by a very dry and mild summer. The only signifi cant rainfall for the vintage period was not until mid-April, ensuring an excellent ripening period with fruit retaining pristine varietal fl avours, great concentration and intensity.

WINEMAKING: Fruit was harvested and berry sorted prior to fermentation in a combination of open and static stainless steel fermenters. The ferments were managed with a combination of plunging and pump overs. All batches were basket pressed and transferred to large oak vats for malolactic fermentation and subsequent maturation before being blended and bottled in July 2011.

APPEARANCE: Dark red with crimson hues.  

NOSE: Bright blueberry and mulberry fruit combine with cinnamon, star anise and black pepper.

PALATE: Fruit forward with juicy fresh blackberries and ripe plums. Some subtle spice adds extra dimension to a savoury, long and well structured palate with minimal oak infl uence.

FOOD PAIRING: Medium rare Wagyu beef burger served with shoestring fries.

CELLARING: Drink now to 2020.
