Sparkling wines are made for celebrations! Can vary from sweet Moscato styles to drier Chardonnay or Pinot Noir blends. These wines are lean and austere with complex yeast characters, creamy texture and fine acidity.
Handpicked bunches were chilled in trays for 48 hours before being loaded and gently whole bunch pressed extracting the delicate heart run juice for Croser. This juice was settled then racked prior to being fermented in old Vosges barriques with Petaluma’s own selected yeast strains for 2 to 3 months, prior to inoculation with Petaluma’s malolactic bacteria, used to soften the high acid wines. Blending took place in November 2007 with 66% Pinot Noir and 34% Chardonnay selected for the 24th consecutive Croser blend preceding tirage. After an average of two years on yeast lees the 2008 Croser was disgorged with a dosage of 7gpl residual sugar.
The palate is richly textured with a wonderfully fine and creamy bead, a Croser hallmark.
All of the pinot Noir and chardonnay grapes for Croser are grown in Petaluma's Piccadilly Valley vineyards at between 400 and 500 metres ASL, on the cool south and west facing slopes of Mount Lofty and Mount Bonython in the coolest viticultural region in South Australia.
