Formally known as a Classic Dry White Wine. The Classic White is predominantly blended with Sauvignon Blanc, Semillon and Chardonnay grape varieties.

Evans & Tates vineyards in the more northern part of the region tend to produce Semillon with nectarine and lemon flavours whilst Semillon from their more southern vineyards in Margaret River contribute grassy, herbal notes and impart a fantastic fleshiness to the palate. Sauvignon Blanc provides additional flavour intensity with tropical fruit flavours coming from fruit sourced from vineyards in the northern part of Margaret River whereas thier cooler vineyard sites in the south of the region produce Sauvignon Blanc with fresh grassy notes distinct to Margaret River. Parcels of fruit were picked in the cool of the night to retain freshness and the cool grapes were softly pressed with only the highest quality juice settled and prepared for fermentation. A strong, cool fermentation followed and when dry, the wine was lightly fined and cold stabilised. These winemaking techniques have preserved freshness and flavour intensity which has then been captured in an early bottling - ideal for their Classic White style.

Grape Varietal: 50% Semillon, 38% Sauvignon Blanc, 6% Chenin Blanc, 6% Chardonnay.

Colour: Very pale straw with a vibrant green rim.

Aroma: Classic Semillon Sauvignon Blanc characters of honeydew melon, nectarine, green apple, lemongrass and lime zest show on the nose. A touch of dried herbs, distinct to our Classic White style, adds a further dimension.

Palate: The palate is long and dry with a lovely juicy sensation from the Semillon imparting intense front palate fruit flavour whilst the Sauvignon and Chenin Blanc contribute length and tightness to the overall blend.

Food Suggestions: Barbecued cuttlefish, chorizo and green bean salad; Roasted capsicum frittata and seasonal salad.
