Riesling produces some of Australia’s best dry white wines. An aromatic variety that can be enjoyed in its youth when it displays citrus, lime and mineral characters or if allowed to age,will develop complex toast or honeyed characters.

The Estate Riesling fruit was harvested very early in the morning to ensure the temperature of the fruit is as cold as possible. Riesling is very fragile and its quantity of extractible phenolics makes it a challenge to handle. A key aim of the winemaking process was to preserve the very delicate flavours and aromas of this variety. The fruit was pressed immediately after harvest, without enzyme, to allow a gentle and quick extraction of the juice. Only the first portion of juice goes into the Forest Hill Estate label (with the freshest flavours and the least amount of phenolics) and is sent to a tank for cold settling. The juice was then cold settled, racked and left to ferment with wild yeast at a temperature between 15-17 0C. Wild fermenting is a significant risk for such a fragile variety however the complexity of flavours and softer mouth feel from the indigenous yeasts are a unique and rewarding feature of this wine. Once fermentation is complete the wine is fined with isinglass and prepared for bottling as soon as possible to preserve the vibrant flavours and aromas.
Brilliant pale straw colour. Lifted mineral aromas of lemon blossom and fresh rose petal with underlying lime rind hints. Subtle floral notes develop in the glass. Intense and vibrant flavours of citrus blossom and lime zest feature on the palate leading to a flinty crisp finish. The mouth feel is large with a fine talcy texture and sound fruit weight. The natural acidity is very well balanced and integrated, lifting the freshness of flavours and lengthening the mouth feel. The wines freshness, intensity and fleshiness on the palate make it very approachable now, however the acid structure of the wine will see it age well over the next 4-6 years.
