More commonly known as Stickies or Dessert Wine. They're intensely flavoured white wines, deeply gold in colour with bouquets of dried apricots, rich sweet flavour and a sharp acid finish. A great accompaniment to fruit desserts.  

Frequent vineyard inspections are conducted to monitor the Botrytis growth and to avoid fruit degradation. The vineyards were classified and separated into six distinct sections dependant upon the level of Botrytis infection and flavour. Each section is hand harvested at the optimum time when the degree of Botrytis infection, sugar concentration and flavour intensity were in balance. The fruit is hand harvested, cold soaked for 24 hours, gently pressed and then fermented separately using a selected yeast strain. The ferments were assessed daily until the optimal sugar alcohol balance was reached. The fermentation process was then stopped via cooling. The resultant wines were then transferred into oak for maturation. Blending of the parcels was completed just prior to bottling.
The colour is bright, straw with golden, green hues. The bouquet is preserved lemons and apricots with orange rind botrytis characters complimented by hints of vanilla. The palate is intense preserved lemons and apricot fruit which tantalise the taste buds. A smooth viscosity with a textural length ensures the palate is complete. The structure of this wine is definitely leaning towards freshness rather than lusciousness. An outstanding example of high quality Botrytis Semillon produced from the Riverina grape growing region of NSW.
