Shiraz showing it's spicy flavours and the Cabernet Sauvignon it's full bodied berry flavours. Shiraz is a equal blending component for Cabernet Sauvignon. In modern times, this blend originated in Australia.

Once harvested, individual parcels of Shiraz and Cabernet Sauvignon fruit were destemmed and crushed individually to small static fermenters. Fermentation was initiated with neutral yeast strains, and temperatures were allowed to peak at around 28ºC before chilling back to 20-22 ºC for the completion of fermentation. The fermenters were pumped over regularly to ensure thorough yet gentle extraction of colour and tannins from the grape skins. The progress of each ferment was monitored during twice-daily tastings and regular analysis checks. Some Cabernet parcels were kept on skins for several days of additional maceration after the completion of fermentation, to provide full yet finely structured tannin profiles. Each individual ferment was pressed separately, and Shiraz parcels were then filled to carefully selected new French and American oak hogsheads, while Cabernet parcels were filled to new French oak hogsheads, where spontaneous malolactic fermentation and subsequent maturation took place. Each barrel was reviewed after approximately 18 months in oak,with only the finest barrels selected for inclusion in the final blend. Winemakers monitored a small selection of the very finest blocks of Shiraz and Cabernet Sauvignon carefully throughout the ripening period, constantly tasting the fruit toensure it was harvested at optimal flavour ripeness and acid balance. Those blocks showing exceptional class and intensity were then earmarked as potential components of the Jacob’s Creek Johann Shiraz Cabernet, so that they could be afforded the best possible treatment at the winery. Harvesting took place from mid to late March for Shiraz and during mid April for Cabernet Sauvignon.
Full depth crimson colour. The bouquet is rich and complex, showing a harmonious blend of ripe blackberry and spicy black pepper characters from Shiraz and refined, briary fruits from Cabernet Sauvignon, supported by cedary vanilla oak. The palate is dense, with layers of concentrated, stylish fruit flavour seamlessly integrated with stylish and attractive oak; full bodied in structure with intense, fine yet soft tannins, carrying the fruit to a long, rounded finish.
