Riesling produces some of Australia’s best dry white wines. An aromatic variety that can be enjoyed in its youth when it displays citrus, lime and mineral characters or if allowed to age,will develop complex toast or honeyed characters.

Regular block visits by Jacob's Creek winemakers during ripening ensured the selection of quality fruit parcels for inclusion in Jacob’s Creek Riesling. The fruit was harvested in the cool of the night at optimum vineyard temperatures of less than15º Celsius and delivered to the winery. The fruit was destemmed, crushed and then gently pressed to minimise the extraction of phenolics. Once clarified, the juice was fermented at cool temperatures using selected yeast strains to enhancethe Riesling varietal characters. The resulting wines were then put on the tasting bench, where the winemakers spent numerous hours selecting only the wines that met both the style and quality parameters for inclusion in the final blend. Once blended the wine was stabilised, clarified and bottled under anaerobic conditions.
