Good Cabernet Sauvignon exhibits ripe, dark berry fruits and is elegant and tightly structured with fine grained tannins and integrated oak. Cabernet has the ability to age well and is often blended with Merlot or Cabernet Franc.

The key to providing premium high quality wines from the vineyard is in the selection process. Each Coonawarra vineyard was carefully monitored as ripening progressed and only those parcels exhibiting excellent potential in varietal expression and colour intensity were set aside as candidates for St Hugo.Each vineyard parcel selected for St Hugo, after reaching optimum flavour ripeness, was individually harvested and vinified. All grapes delivered to the winery were de-stemmed and crushed into static fermenters. Extraction of colour, flavour and tannin were achieved by “pumping over” regularly, allowing the fermenting juice to percolate through the skins. The process was conducted within a temperature range of 15-28˚C, the ferments were held on skins forbetween 12 and 20 days. Once optimum flavour and tannin profiles were achieved, the wines were drained from the skins: the skins were then pressed with the pressing returned to the drainings. Maturation for 18-24 months was undertaken in new and one year old French oak hogsheads. Tasting of individual parcels revealed those that showed the regional and varietal characteristics required for St Hugo, and these were used to create the final blend.

Bouquet: Intense blackberry and cassis with minty notes and spicy oak.

Palate: Concentrated blackberry, cassis and mint with supple velvety tannins and integrated cedary oak.
