Good Cabernet Sauvignon exhibits ripe, dark berry fruits and is elegant and tightly structured with fine grained tannins and integrated oak. Cabernet has the ability to age well and is often blended with Merlot or Cabernet Franc.

The grapes for Jacaranda Ridge Cabernet Sauvignon were sourced from the very best Coonawarra vineyard sites, picked at optimum flavour ripeness following repeated vineyard inspections by the winemakers. Each individual vineyard parcel was destemed into small static fermenters and inoculated with a neutral yeast strain to maximise the expression of varietal Cabernet Sauvignon fruit. The ferments were maintained at moderate temperatures ranging from 15-28 degrees Celsius for a period of 15-17 days to maximise colour, flavour and tannin extraction. The four individual vineyard parcels selected for the blend were aged separately for 21 months in new French oak Hogsheads from selected coopers in our temperature controlled cellars. Rigorous selection of the individual barrels was carried out, using only those of the highest standard for the final blend.
COLOUR: Full depth crimson ruby.
BOUQUET: Richly concentrated and intensely varietal, showing dense cassis and blackberry aromas on the nose, with dark chocolate and tobacco leaf nuances and well-handled cedary oak providing additional complexity and support.
PALATE: A powerful and tightly structured wine – full bodied, showing intense cassis, black fruit, aniseed and spice flavours, persistent, finely grained fruit and oak tannins and balanced acidity, leading to a long, savoury finish.
ASSESSMENT: An iconic example of a Coonawarra Cabernet Sauvignon. Still youthful on release, this wine will reward the patient by revealing its true potential over the next 15 to 20 years.  We recommend that this wine be decanted before serving for best results.

Winestate's Best Wines of 2010. Orlando Jacaranda Ridge Coonawarra Cabernet Sauvignon 2005 ****. Deep, dark and brooding number but there's plenty of life, viguor and complexity showing through. Good cabernet fruit and firm tannin structure.
