Widely planted in Australia, Chardonnay produces rich, flavoursome wines in warm climates and more complex wines with finesse in cooler climates. Generally fermented or aged in oak but unwooded styles are also popular.
WINEMAKING - During the growing season winemakers and viticulturists spent many days amongst the Chardonnay vines in Padthaway selecting parcels of fruit from the most promising vineyards. What they found were grapes expressing ripe varietal fruit flavours with balanced natural acidity. To determine the ideal harvest date sugar and acid levels were monitored in conjunction with flavour accumulation, and vine condition. Gentle fruit handling is essential for capturing the fruit flavours expressed in the vineyard, therefore harvesting occurred in the cool of the night, and the grapes were lightly crushed, chilled and pressed. Each component of free run juice was clarified and then inoculated with a selected strain of yeast and transferred to oak barrels for fermentation. Yeast strains were selected on their ability to encourage the varietal characters of the fruit whilst adding to the complexity of the wine. Malo-lactic fermentation, lees contact and stirring combined with aging in oak barrels ensured that the wine parcels developed complexity, weight and texture. Extensive tasting throughout maturation ensured that only the best parcels of wine were blended to produce this balanced and high quality Chardonnay.
COLOUR: Pale straw.
BOUQUET: Fresh, home grown, white peaches and figs are lifted by vibrant lemon citrus notes. There are also layers of spicy oak and soft, creamy malo-lactic characters.
PALATE: The complexities of the aroma follow on to an intriguingly complex pallet. This is a strong wine with layer upon layer of elegant, and subtly integrated, fruit and oak. The white peach fruit is ripe and full and is balanced by soft lemon citrus acidity whilst the oak adds nuances of smoky, spicy, nuttiness. Malolactic fermentation and extended lees contact has resulted in a seamless and creamy texture which is supported by lovely natural acidity, lingering on the pallet.
