The most common form of blending red wine in Australia is by using Cabernet, Shiraz and Merlot. Each variety of grape creating different depth of flavour and texture to the final product.

Sandy soils over limestone require careful water management as they readily dry out during summer. Supplementary irrigation strategy and canopy management are adapted to suit each site, providing a good balance of light and shade in the canopy and maximising fruit quality. Good rainfall in spring, coupled with a relatively mild summer, gave the grapes a chance to ripen slowly. Fermentation was carried out in static and rotary fermenters under warm conditions for six days, creating a good balance between appropriate tannin extraction and retention of fruit drive and aromatics.

Deep ruby purple with hints of crimson, this wine displays lifted aromas of blackberries and plums with suggestions of cedar and violets. The palate is elegantly structured with layers of red berry fruits, anise and fruit pastille. Shiraz adds a silky texture and sweetness to the mid palate whilst the Cabernet provides structure and a soft tannin finish. Synergy and elegance.
