Cabernet Sauvignon is powerfully flavoured, blackcurranty and full-bodied. When you do add Merlot it makes a perfect partner with its fruit flavours and velvety softness.
Blend: 65% Cabernet Sauvignon 35% Merlot
Region: Central Ranges, NSW
Harvest: Late February – early March 2010
Winemaking: Vinified from selected parcels. Following harvesting over a two week period, the fruit was de-stemmed, crushed then fermented separately under warm temperatures with twice daily maceration of skins to assist in colour and flavour extraction. Pressed off at the completion of ferment and matured with French and American oak for 6 months. The wine was then blended, clarified, stabilised, filtered and prepared for bottling.
Apperance: Deep red with purple edges.
Aroma: Bright fruit characters that lift from the glass; rich plums and blackberries with hints of warm spice
Palate: Mouth filling, with a defined palate. Lifted oak and hints of chocolate with subtle fine tannins. Good length from front to finish.
Cellar: Up to 4 years.
Serve With: A perfect accompaniment to roast or barbecued red meats, venison and game dishes.
