Widely planted in Australia, Chardonnay produces rich, flavoursome wines in warm climates and more complex wines with finesse in cooler climates. Generally fermented or aged in oak but unwooded styles are also popular.
Pressed straight off the skins, and separated free run and pressings juice to treat separately. Juice settled and racked keeping a small amount of solids and cool fermentation initiated in 100% stainless steel using several different selections of wine yeasts. Post ferment different parcels of wine were kept on yeast lees and stirred. Stirring ceasing when desired complexity and palate weight was achieved, then left to settle. The different parcels were then blended; the wine then stabilised, clarified and filtered prior to bottling.

Apperance: Bright golden hue with green edges.

Aroma: Lifted bright notes of ripe tropical fruits, banana and melon.

Palate : Tropical fruit and citrus with textured mouth feel and balanced acidity.

Cellar: Drink now, can cellar for up to two years.

Serve With: On its own, or as an accompaniment to fish, seafood, chicken, or French inspired dishes.
