The vines are grown in shallow clay shale over clay soil, are 9-10 years of ages and were hand picked. The fruit was partially crushed and destemmed and partially whole-bunch loaded to open fermenters and cold soaked prior to fermentation commencing. The ferment was tasted two times daily and the extraction regime determined by the level of flavour and tannin extraction. When optimal levels were reached the ferment was softly pressed by basket press to oak barrels where It was left on gross lees to build texture fro up to four months. The wine tasted regularly during the maturation period and racked from barrel and returned when required.
The wine is cherry red in colour with red hues and appears bright and clear. The nose is vibrant and fragrant displaying intense and pure varietal aromas of ripe black cherries and red currant. Spicy and earthy notes add an intriguing complexity to this wine's bouquet. Bright and fresh flavours of ripe plum and dark cherry fruits intermingle with earthy, forest floor and spicy notes. These freshly textured fruit characters wrap themselves around ripe, firm tannins which provide the palate's framework and length. The overall impression of the wine is one of subtlety, elegance and finesse.
