The fruit for this wine was sourced from the Taylor family estate in the Clare Valley and also from a grower in the Adelaide Hills. The fruit was picked during the cool of the night to ensure the delicate varietal flavours were retained. The berries were de-stemmed and then gently pressed. Each parcel was fermented separately using varietal specific yeast strains in stainless steel vessels. Post fermentation the separate parcels of wine were blended and prepared for bottling. Minimal filtration was employed prior to the wine being bottled.
