The blending of Shiraz and Viognier originates in the Northern Rhone region in France. The technique of picking and co-fermenting a small proportion of Viognier (white) with the Shiraz increases the aromatics and richness of the Shiraz fruit, whilst seamlessly introducing a subtly spice twist to freshen up the finish, are the reasons for this style.

The fruit for this wine was picked at night and early in the morning to retain the fresh varietal flavours. The berries were de-stemmed and then transferred to our fermenters. A warm, controlled co-fermentation of both grape varieties was carried out using select yeast strains that highlighted different varietal characteristics. Afterwards, the wine was pressed and then filled to American oak barrels for malolactic fermentation. Post MLF, the wines were blended and fined - minimal filtration was utilized prior to bottling.

Colour : On release, the wine is a medium deep red with purple hues.

Aroma : This wine has an intense aroma of lifted spice and dark blood plums along with subtle apricot character. Underlying aromas of vanilla, and cherry’s dipped in dark chocolate add to the complexity of the aroma.

Palate :The wine is medium bodied and quite juicy in texture. It has a delicacy and displays sweet, concentrated fruit flavours of juicy plums and blackberry, along with subtle spicy apricot. This is a well integrated and balanced wine with an enjoyable persistence to the finish.
