The fruit for this wine was sourced from growers in the Adelaide Hills in the Gumeracha, Birdwood, Woodside, Oakbank and Balhannah districts. The fruit was harvested during the cool early hours of morning to ensure fruit flavour characters were retained. At each site, the grapes were picked into 2.5tonne bins and immediately transported to our winery to arrive before 7am. Once received, the grapes were quickly de-stemmed and chilled to 4°C to protect from oxidation. A portion of the juice (60%) is cold soaked for 4 - 6 days to maximise colour and flavour. This was followed by a warm to hot fermentation in stainless steel using specialised yeast for Pinot Noir. The wine is pressed, settled and then secondary malolactic fermentation is encouraged. Following that, the wine is filled to a combination of 1 and 2 year old French oak hogshead barrels for maturation prior to bottling.

Appearance: At release, the wine is a bright red with a vibrant purple hue.

Bouquet: The wine has enticing, lifted fruit aromas of red currant and cherry fruits with a touch of spice and a very subtle minty, menthol character.

Palate: The wine is medium-bodied with flavours of ripe cherry and sweet red berry fruits along with delicate star anise spice characters. The palate is sublimely soft with silky tannins. The back palate displays slight warmth while subtle oak characters of cinnamon and cedar add to the overall complexity of this fruit-driven wine.
