Good Cabernet Sauvignon exhibits ripe, dark berry fruits and is elegant and tightly structured with fine grained tannins and integrated oak. Cabernet has the ability to age well and is often blended with Merlot or Cabernet Franc.

Fruit was harvested from the end of February until the end of March when the berries reached optimum flavour and tannin ripeness. Fermentation was carried out in the winery’s original “Potter” fermenters, which allow for excellent control of skin maceration and extraction as the wine can be pumped over twice each day. Some parcels were left on skins for a further 3 weeks to increase tannin structure of the overall wine. The parcels of wine were then pressed to French oak barrels for completion of primary fermentation and then malolactic fermentation. Post MLF the wine was matured for at least 12 months in French oak barrels (20% new; 80% 1 to 4 year old) prior to final blending and then preparation for bottling.
WINE COLOUR: The wine is a deep red with a vibrant purple hue.
WINE BOUQUET: The wine has an aroma of rich blackcurrant, licorice, subtle spice and a touch of dried basil. French oak maturation is also evident with subtle aromas of tobacco leaf and cedar.
WINE PALATE: This is a wine of great intensity. It has distinctive blackcurrant and cassis fruit flavours. Subtle oak characters of cedar cigar box and spice are also evident. The tannins are fine and elegant – a hallmark of the varietal. The palate is well balanced, complex and fulfilling and lingers on the finish.
