Good Cabernet Sauvignon exhibits ripe, dark berry fruits and is elegant and tightly structured with fine grained tannins and integrated oak. Cabernet has the ability to age well and is often blended with Merlot or Cabernet Franc.

Coonawarra's Terra Rossa soil and maritime influenced cool climate is the perfect combination for Cabernet Sauvignon. Each individual block was harvested and fermented separately in small rotary fermenters. The gentle ferments went for 6 to 8 days with occasional aerative pumpovers. After pressing off the skins, the wines were racked into new and seasoned French and American oak to complete malolatic fermentation, before being racked several times and returned to oak.
Wolf Blass Gold Label Coonawarra Cabernet Sauvignon is a deep crimson colour with a solid core. An attractive nose of lifted dark fruits including cassis and mulberry with hints of violets and mint, supported by subtle cedary oak. The palate is medium to full bodied with rich varietal flavours, balanced fresh acidity and fine grained tannins, delivering a long seamless finish.
