Good Cabernet Sauvignon exhibits ripe, dark berry fruits and is elegant and tightly structured with fine grained tannins and integrated oak. Cabernet has the ability to age well and is often blended with Merlot or Cabernet Franc.

Langhorne Creek's deep alluvial soils and maritime influenced climate produces fruit with great richness and depth of flavour. Wolf Blass was one of the first wineries to help put Langhorne Creek on the map. It was a relatively unknown region in the 1960s. Following crushing, the wine was fermented on skins for up to seven days, allowing optimum release of colour and flavour without extracting excessive tannins. Individual parcels completed fermentation in seasoned and new French and American oak. After 18 months of barrel maturation, the winemaking team carefully assessed each parcel before blending and bottling.
A deep, dark purple core with crimson edges. The nose shows rich bramble berry fruits, heightened by regional nuances of eucalypt and mint that is supported by subtle warm spice and cedary oak. The palate is full bodied and rich with wellbalanced oak. The core of blackcurrant and dark cherry fruit is focussed with long elegant dusty tannins.

Wine100 January/February 2011. Wolf Blass Grey Label Cabernet Sauignon 2008. Tyson Stelzer 93 Points. "Wolf Blass has elevated itself out of the oaky days of old. A warm season has produced a rich, plush style. What it acks in varietal distinctiveness and longevity it makes up for in powerful black fruits, while refined tannins and vibrant acidity propels the wine forward and maintains control." RRP $43.00
