Widely planted in Australia, Chardonnay produces rich, flavoursome wines in warm climates and more complex wines with finesse in cooler climates. Generally fermented or aged in oak but unwooded styles are also popular.
Warm weather during the 2008 vintage proved to be both challenging and rewarding. High altitude vineyards and early harvesting proved to be the key to successfully retaining good freshness and a bright flavour profile – a profile that continues to improve year after year.
The two most significant evolutions for the 2008 Chardonnay were the use of natural fermentation during the winemaking process and the use of 100% French Oak Puncheons during the maturation process. Natural fermentation helped define the creamy texture and add further complexity to the wine while the puncheons ensure a finer, more delicate style is achieved.
Bright, pale straw with green hues, the bouquet exhibits attractive fresh citrus characters underlined with delicate white peach and stone fruit flavours. The lovely combination of ripe nectarine characters and fine cashew notes derived from barrel fermentation provides additional layers and depth.
Vibrant and soft, the palate showcases lifted fruit flavours of lemon zest, green melon rind and ripe red apple. The mid palate is juicy with underlying sweetness complementing the balanced acid structure. This wine shows elegance and restraint before finishing with impressive length.
